Here is a pretty simple frittata recipe I tried out, mainly because I had to use the buttermilk in the fridge before it got all scary like ^_^
Ingredients
- 1 1/2 tbs olive oil
- 1/2 small onion
- 1 garlic clove (I added more as I loooove me some garlic)
- 3 medium zucchini, sliced
- 1 medium capsicum, diced
- 5 button mushrooms, sliced
- 1 tomato roughly chopped
- 1/2 cup basil, roughly torn (I used a pinch of dry instead - but I think fresh would taste better)
- 5 medium eggs
- Cracked pepper
- 2 handfuls of baby spinach leaves
- 3/4 cup mozzarella, grated (I used pizza cheese, as it is a combination of cheddar, mozzarella and parmesan)
Method
1. Preheat oven to 180C
2. Heat 1tbs oil in a pan and saute onion and garlic for 2 minutes. Add the rest of your veggies and saute until soft - about 5 more minutes. Add basil leave to one side.
3. Whisk together your eggs and buttermilk, seasoning with pepper. Pour this into an oven proof dish.
4. Cook this in the oven for 5 or so minutes until you have a skin form around the outside.
5. Spoon your veggies into the egg mix and cook for a further 7-10 minutes.
6. Top with your spinach and cheese and leave in the oven until the cheese is melted.
7. Serve and enjoy
I found I was a bit heavy with the basil - hence why I think fresh would of had a nicer taste.
Anyhoo, I am still sick - just had two days off work, so no bueno :( Need to get fit and healthy straight away!
