Was a busy day but it was great. Food was amazing and the company lovely. I went with an Italian themed dinner:
Nibblies - mixed bunch of cheeses, dips and some anitpasto (olives, stuffed capsicums, boccoccini wrapped in proscuitto)
Entree - Bruschetta
Main - Lasagna, Spaghetti & Meatballs, Veggie Skewers, garlic bread and salad
Dessert - Toblerone Mud Cake, Tiramisu, Apple & Berry Crumble
Here are some easy recipe's for the dishes I cooked:
Bruschetta
Dice 3-4 tomatoes and 1 red onion
Mix in 1/2 teaspoon of crushed garlic and a liberal amount of olive oil.
Cut up a long crusty roll and toast slightly on one side. Rub a clove of garlic over the surface then spoon on the above mix. Drizzle a small amount of Balsamic vinegar on top and sprinkle with sea salt. Serve and Eat!
Spaghetti & Meatballs
Mix 1 cup bread crumbs with 1 egg, 2 tablespoons milk and set aside for 5 minutes. Add 1/4 cup of grated parmasen and 1 tablespoon of fresh oregano & 1 of parsley plus a chopped clove of garlic.
Add 500g beef mince (I did 1/2 beef 1/2 pork) and mix thoroughly then firm into meatballs. Brown slightly in a pan with some olive oil. Take off the heat when still a bit pink. This keeps them from going tough whilst cooking further in the next step.
In a large pot pour in puree tomatos with a small amount of red wine and a teaspoon of sugar. Add the meatballs and extra sauce until they are mostly covered. Cook for 45mins on medium heat, careful not to burn.
Cook one pack of spaghetti to serve with this...I accidently cooked waaaay too much *ahem*
Veggie Skewers
Chop up whichever veggies you want and skewer. Pour over soy sauce and bbq until soft. Serve as is.

ReplyDeletecapsicums (or peppers) stuffed with cheese. Yum! Except these ones were hot so I didn't eat them. You can stuff them with different things, even risotto
